Description
This pot doubles as a bean pot and soup/stew pot. The hand rubbed terra cotta finish gives the outside a rustic, natural feel, while the interior is glazed with a dark, glassy, brown called Assalie. The Egyptian word Assalie means honey or molasses and describes exactly the color and feel of this glaze.
This pot is ideal for about 1½ pounds of beans, depending on the variety. Just dump in some very good quality, freshly dried beans (We love Rancho Gordo’s!), maybe a clove or two of garlic, or some onion, cover with at least two inches of water and cook away. Then, use those cooked beans in any number of dishes from salads to soups, or even solo with a pinch of salt. Simple and delicious!
Traditionally, families would almost always have a soup/stew pot going on the back of the fire. They would add to it whatever they had available in the way of meat and vegetables, cover them with water, and let it go at a slow simmer. If done with a quality piece of meat, it serves as the perfect one pot meal – the first course being the cooking broth as a soup, and the main course being the meat and vegetables.
Serves 6-8 people.
