Our soup/stew pot is modeled after an Old World French pot-au-feu or “pot on the fire.” (Pot in French refers to a large earthenware vessel.)
Traditionally, families would almost always have a soup/stew pot going on the back of the fire. They would add to it whatever they had available in the way of meat and vegetables, cover them with water, and let it go at a slow simmer. If done with a quality piece of meat, it serves as the perfect one pot meal – the first course being the cooking broth as a soup, and the main course being the meat and vegetables. Serves up to 4 people.
